3boneless skinless chicken breasts fresh or frozen about 2 lbs.
1/2cupchicken broth unsalted
110 oz. canRotel Diced tomatoes and green Chilies no salt added
For the taco spice:
1 1/2tspchili powder
1 1/2tspchipotle chili powder
1 1/2tspcumin
1tspsmoked paprika
1/2tspgarlic powder
1tspdried onion flakes
1tsporegano
1/2tspblack pepper, ground
WHEN SERVING AS TACOS USE
Corn taco shells or no-low sodium tortillas
Shredded cheese
Shredded lettuce

Instructions
Place chicken breast in the bottom of the Instant Pot. Add no sodium chicken broth.
Sprinkle taco seasoning evenly over chicken breasts. Then cover on top with the Rotel.
Put cover on pot and ensure valve is in sealed position. Press “Manual” and adjust time to cook for 12 minutes if thawed and 15 minutes if frozen.
When 12 minutes timer has finished, release pressure immediately. Then remove and finely shred chicken. Recombine with juice from Instant Pot and serve as desired.
Notes
To make this low sodium meal you can also use my low sodium salsa and taco seasoning recipe.Nutrition information is for chicken only and does not include taco shells or toppings. Add another teaspoon or two of seasoning for spicier flavor.
